What does the house sitter need to consider before applying for this assignment

It's beautiful and peaceful here, but life in the Caribbean can be unpredictable. Weather may be hot, humid and perhaps rainy. Sometimes city water may be turned off for maintenance. However, we do have tanks for rain catch and city water storage. There are no screens or air conditioning. No hot water.
One needs to be comfortable living with nature, including: geckos, insects and the occasional bird.
The area is mountainous and will require good physical strength and durable footwear.
The government will require a renewable VISA, unless you are a national.

Can I bring my own pets?

Yes
